Artichoke Dip for the Masses

I wanted something new but easy because I needed to get into my garden and spend some serious time there so I didn’t have time to make something elaborate. Plus our gathering was going to be down by a river so whatever I brought had to be portable and easy to set up. This dip melds a few of my favorite things: artichokes and Parmesan cheese. It takes about 5 minutes to make. How great is that?
Artichoke Dip
ingredients
2 cans artichoke hearts, well drained
1/2 cup grated Parmesan cheese
1/4 cup olive oil
2 tablespoons lemon juice
2 tablespoons flat-leaf parsley, chopped
1 tablespoon minced garlic
salt and pepper to taste
method
In a food processor, chop up the artichoke hearts until coarsely chopped. Then add the rest and pulse until well mixed and the smoothness you want. Taste and adjust the salt and pepper. Serve with the dippers of your choice.
